Niscotheque Tripel

The first of this year’s birthday brews, our January birthday brewer, Nic Montoya-Valdez, chose a Belgian-style Tripel. Big, fruity, spicy Belgian yeast character dominates the nose, with some caramelized sugar from golden candi syrup added to the boil. Hints of sweet syrup continue on the palate with some phenolic spice on the finish. Made with a grist of mostly Pilsner malt, with some wheat and rye, pair with a light touch of noble hops for seasoning, for a dangerously easy drinking Tripel at 8.3% ABV, so sip and savor slowly. Santé!
