Belgian Cherry Dark

A little luxury for the cold weather, this dark Belgian-inspired treat has notes of chocolate & cherry with a full bodied sweetness offset by a little roast from the American, English and European specialty malts and some spicy phenols from our locally sourced yeast. 6 lbs per barrel of sweet cherry puree were added into the fermenter, a good chunk of piloncillo sugar added to the boil and some flaked rye and torrified wheat in the grist for extra body. A little decadence to enjoy while we wait for the world to thaw out a bit.
